The Chef Lorenzo Mazzoni says:
Nuts, Giarratana Onions, and Valerian Magliati Salad (“Insalata di Noci, Cipolle di Giarratana e Valeriana maltagliata”).
This recipe is only apparently rough. The raw ingredients embed, for their very own nature, the right dressing for each other. Hence the fat and oil enclosed in the nuts will be the dressing for the valerian and the Giarratana onions, which at the same moment will provide the sugars needed for the proper tasting of the dried fruit.
